Made my own crock-pot chicken recipe.  two thumbs up, one thumbs down, and one uncertain.

Layer in crock pot:
1 med onion sliced
8 mini sweet bell peppers sliced
8 chicken thighs
1 can low sodium V-8 juice
1/2 t pepper
1/2 t salt
1T Italian seasoning
1 t dry basil
Cook on low 6 hours.
Serve with yellow saffron rice.
I liked it with the Weight Watchers veggie 0 pt soup, and no rice.

Had to make up for all the banana bread I chowed down last night :-)
