My Quest

OK so I tried a Splenda recipe tonight, doubled it, and forgot to add the milk. Should be interesting. The mix seemed moist enough when I put it into the pan....but we'll wee. With the milk it's only 2 WW points per bar.
Somehow my concentration is just shot!

We did manage to read scriptures tonight and two children went to bed at nine instead of ten - WhooHoo!

Is it possible that I can actually establish a routine and stick to it?

The Quest

1- Cook meals from my menu with ingredients already purchased.
2- Prepare meals every evening that are nutritious, cost effective, taste good, and are satisfying.
3- Exercise 30 minutes daily.
4- Do at least two loads of laundry start to finish M-S.
5- Read scriptures and say prayers at least privately every day.

Doesn't sound too ominous - so why is the routine so hard to establish????

I have a near daily habit of reading email, checking facebook, and brushing my teeth....so I can do this, right ?! It's all about priorities I'm told.


Pumpkin Oatmeal Breakfast Bars

2 1/2 c uncooked oatmeal
2 t baking powder
1 c Fat free skim milk
1/2 c Egg Beaters
1/2 c unsweetened applesauce
1/4 c Splenda
1/8 c Splenda Brown sugar Blend
2 t pumpkin pie spice
1 t ground cinnamon
1 c pumpkin (1/2 of 15 oz can of Libby's)
1 t vanilla

Preheat oven to 350 degrees. Spray an 8" square dish with PAM. Combine wet ingredients. Combine dry ingredients. Stir dry ingredients into wet ingredients. Pour into prepared baking dish. Bake for 40-45 minutes, until toothpick comes out clean.

Cool completely before cutting...and for an added treat, serve warm with a little bit of Log Cabin Sugar Free Maple Syrup and/ or add raisins, nuts, and sliced apples to the mix! Can also be served as a desert with Cool Whip :-)

Results - ggod flavor, great with the syrup, probably better with the milk, but the two kids who are still awake like it. Won't the other two be jealous in the morning...oops. Then again, they don't generally like to try new foods.
